Potatoes harvested in late summer or autumn are called late potatoes. Early potatoes are harvested before they are fully ripe, and sold immediately. Their skin is thin and easily removed through scraping. Early potato varieties are not suited for storage. In fact, they should be used within two weeks after they are bought and kept in a dark, cool space. Later potato varieties are a better choice for storing.
