Mirepoix, aromatics, soup vegetables



Soup vegetables are vegetable mixtures intended to give flavour to stocks, soups and stews. Depending on the country they may contain different vegetables. Mirepoix is derived from French cuisine and consists of carrots, onions and celery. Mirepoix vegetables are often called aromatics. They are also used in meat or fish dishes, for sauces and as a garnish. Further ingredients used as soup vegetables or in mirepoix are leeks, parsley and parsnips. Mirepoix is available fresh or dried.
