Due to the salt the vegetables become non-perishable and no lactic acid fermentation can occur. Salted vegetables (for example salted asparagus or salted beans) are semi-finished products that are used for further industrial food processing almost exclusively. Salted vegetables have to be soaked in water before they can be used.
