Silverskin onion, bot.: Allium cepa var. cepa, Allium cepa var. fistulosum, de.: Silberzwiebel, fr.: petit oignon blanc

Pickled silver skin onions

Silverskin onions are onions of the genus Allium and belong to the botanical family of Alliaceae. They are a small variety of bulb onions. Silverskin onions may reach between 15 and 35 mm and have a white to silvery skin. Although they look very similar to pearl onions, they belong to a different botanical variety.

Most silverskin onions are processed industrially for mixed pickles or other pickles. Sometimes the mild onions may be found fresh. A large part of fresh silverskin onions are grown in Israel or the Netherlands.

Preparation of silverskin onions

Apart from their use in mixed pickles silverskin onions are well suited as a braised vegetable served with fried or braised meat.
