The rip chop is a meat cut from the hindquarter of pork. It lies between loin chop and neck.

Pork rib chops are often sold with spine and rib bones. Sometimes the chops only contain the ribs and the spine part is removed (see also: chops). Excellent pork steaks can be cut from pork rib chops. To obtain steaks the chop is trimmed and deboned.

The meat of the rib chop is not marbled as much as the neck, therefore it easily gets too dry.
