Saint-Pierre is a fresh cheese made from goat milk. It belongs to a group of
pyramid cheeses made in Central France. Saint-Pierre has a square base of about 8 cm and is 10 cm high. It weighs about 300 g. Its surface is slightly yellow and is covered unevenly with mould. Like other pyramid cheese the dough of Saint-Pierre is white and without holes. Its taste is creamy but dry and strong. After longer storage time it develops its full goat cheese aroma. The fat content of Saint-Pierre is about 45 percent fat in dry matter.
