Sweet milk or rennet cheeses are the largest group of cheeses. They are produced through the addition of rennet. Most cheeses are produced this way. Sour milk cheeses on the other hand are produced through the addition of lactic acid bacteria. Sweet milk cheeses may contain small amounts of lactic acid bacteria to improve their taste.
