A Swiss roll cake or roulade sponge cake
is the cake used for preparing a Swiss roll.
It is a large, thin rectangular
sponge cake,
baked
especially for the preparation of
Swiss rolls.
The cake is therefore a
baked good,
or more precisely a
sponge.
The
crumb
of roulade sponge cakes should be elastic and juicy,
the surface also needs to be elastic to prevent it from breaking.
Special Swiss roll tins and
sponge cake mixtures
are available.
The sponges can be baked in advance and may be kept for up to 4 weeks when
stored
correctly.
