Preparation of RiebelesuppeIts main ingredients are small doughy lumps called Riebele that are made from flour and eggs. To prepare enough Riebele dough for 2.5 litre beef consommé you need 150 g flour, 1 egg yolk, and 1 egg. Put eggs and flour in a bowl with a little salt and grated nutmeg and rub between your hands to form small lumps. Put those Riebele in boiling beef consommé and cook. Riebele are the soup addition in this consommé. Just before serving add finely chopped chives to the soup.
