Smoked salmon trouts are smoked sides or pieces of fish coming from cleaned trouts with a minimum weight of 1500 g or whole sides with a minimum weight of 400 g. The fat content of smoked salmon trout may not lie below 8 % in the edible parts. Salmon trouts may be mildly salted or salted before smoking.
