Relish

Relishes are condiments made from fruits or vegetables. The ingredients may be cooked or pickled and fruit or vegetable pieces are usually discernible. Although chutneys may be considered relishes they are more often made from fruits whereas relishes are mostly made from vegetables. Relishes are used to season grilled meats, fish or currys.

Preparation of Relishes

One or more kinds of fruits or vegetables are finely diced, cooked or pickled with vinegar, sugar and spices. They may be mild, sweet and sour, or hot containing chillies.
