Pork loin,

Pork loin
is a meat cut from hindquarter of
pork.
It may contain the
tenderloin
(of which the head is cut from the
leg)
and the
neck.
Pork loin is often separated along the backbone in two parts.
The back fat is usually removed before it is sold. Without the outer fat layer the
meat
of pork loin has only 5% of fat.
Pork loin may also be separated in the rear
sirloin roast,
the center loin roast and the shoulder blade roast.
Rib chops
and cutlets are cut from the loin.
Pork loin is sold
cured
and
smoked,
for example for the German
Kassler.
