Ricotta sardina
Ricotta sardina is a
fresh cheese
like all other
ricotta varieties.
It is made from the
whey
of
cow milk.
Its home is the Italian island Sardinia.
The form of this cheese is very untypical for ricotta.
It is conically tapered with a diameter of about 5 cm and 7 to 8 cm length.
Its weight is about 200 g. Ricotta sardina has a ruffled, light yellow surface.
Its whitish, slightly salted interior is soft and spreadable but firm enough to cut.
