Cornmeal is a cereal product similar to semolina. It is a flour made from dried corn, which may be finely or coarsely ground, depending on the desired texture of the dish and region where it is used.

It is a staple in many regions of the world, especially in large parts of Afrika and in Southern and Eastern Europe.

Use of cornmeal

Cornmeal is used for the preparation of boiled cornmeal mush that is eaten in many countries of the world. The Italian polenta is the best known variety of this dish. In the USA this dish is called grits or mush and mainly eaten in the Southern part of the country. Cornmeal is also used for the preparation of crêpes, cakes, bread, tortillas, tamales and other baked goods.
