Piccalilli is a pickle of vegetables and spices, especially mustard. Piccalilli may contain gherkins, small cauliflower florets and pearl onions. Almost any other vegetable variety may also be used for Piccalilli. The vegetables are blanched and then covered with a boiling marinade containing mustard powder, vinegar, sugar, herbs and spices. Piccalilli is for example served with meat or fish.
