A purée is a mash made from
fruits,
vegetables,
legumes
or
onions
and other foods. Purées should be free from plant fibres, lumps and
other residues. To receive a homogenous, lump-free
mass, the food is
pureed
with a food processor or hand blender and sometimes
rubbed
through a
sieve.
