Poaching, to poach, de.: Pochieren



Poaching is simmering food in not too much liquid that is just below boiling point. It is important that the liquid just covers the ingredients to be cooked and gets very hot fast. No bubbles should arise. Foam should be removed so that the water, wine or broth stays clear.
