beef.
It is a cut similar to the American cut
top sirloin.
The meat of the Pastorenstück is very tender. Its shape
is distinctive and reminds of a shark's fin.
The name of this cut derives from times when the best
piece of meat was reserved for the pastor or mayor
(German: Bürgermeister).
