The Pastorenstück or Bürgermeisterstück or tail of rump is a German meat cut that lies above the thick flank of the round of beef. It is a cut similar to the American cut top sirloin. The meat of the Pastorenstück is very tender. Its shape is distinctive and reminds of a shark's fin. The name of this cut derives from times when the best piece of meat was reserved for the pastor or mayor (German: Bürgermeister).
