Pseudocereals are broadleaf plants that are not grasses but produce seeds similar to those. They contain starch and are often confused with cereals. Their seeds can be ground to flour and they are used like cereals in cuisine. Well known pseudocereals are:

  • buckwheat
  • quinoa and
  • amaranth.
