Occhi grassi
Occhi grassi means "fat eyes" and is a
specialty from Italy. It is a
fish product
made from the tasty meat that is attached to the firm, blue eye bones of
tuna.
For Occhi grassi the
deboned
eye area is put in barrels with salt.
In Sicily Occhi grassi are just seasoned with
pepper
and served with
fennel.
