Top round (of beef) is a part of the inner side of the rear round. Connected to the top round with connective tissue is the so-called cap muscle. As a whole the top round is perfect for stewing or as a roast.

Top round, cap off is excellent meat for rouladen. Furthermore the so-called eye round steak is cut from the top round.
