Geisberger is a soft cheese made from goat milk with mould on the outside. It comes from Austria and is produced in small loafs of 100 to 500 grams. Its outer rind is coated with white mould. The inside of this goat milk camembert is white and creamy and has large irregular round holes. It tastes mild and aromatic and only develops the characteristic taste of goat milk camembert as it ages. Its fat content is about 45 % fat in dry matter.
